As a lover of all things banana loaf/bread/cake I have tried out 100's of recipes and this is the one I consistently come back to. Healthy, not too sweet and so easy to make. Ingredients:
3 ripe bananas, mashed
1 tsp vanilla extract/paste
1 tsp cinnamon
1/4 cup of peanut, almond or other nut butter
1/2 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 - 3/4 cup chopped chocolate (whatever kind you like)/chocolate chips
large handful of sunflower seeds, pumpkin seeds, walnuts, peanuts (any combo you like)
Preheat oven to 180 degrees celsius. Line a loaf tin with baking paper.
In a large bowl mash bananas well. Mix in eggs, vanilla and nut butter until well combined.
Stir in cinnamon, baking soda, baking powder, coconut flour and chocolate. Let sit for a couple of minutes (this allows the coconut flour to soak up some of the liquid).
Pour into prepared loaf pan and smooth the top. Scatter over sunflower seeds, pumpkin seeds and nuts. Push them down into the batter slightly.
Bake for 30-40 min or until a skewer inserted in the middle comes out clean. Let cool in tin. Slice and serve.
*The baked loaf freezes well. I slice it into individual slices and wrap them in glad wrap ready to be added to my lunchbox during the week. Just take one out the night before you want it. Can be defrosted in microwave (without the glad wrap) if necessary.
